“Simbiosi” means Symbiosis: two elements that mutually reinforce one another. The wedding between Gerolamo Bindi and Calidonia Sergardi is represented on the label by the union of the two family coats of arms. This wine is the emblem of the Bindi Sergardi philosophy: united we stand, divided we fall.

 

 

Appellation: IGT Toscana Red

Grape varietals: 50% Merlot and 50% Cabernet Sauvignon

Soil: terrain with ample skeleton – Giallo di Siena.

Vinification and aging: fermentation takes place in stainless steel vats and maceration lasts for 18 – 20 days at a controlled temperature of 28/30° C. Shortly after malolactic fermentation the wine is transferred into oaken barriques (50% new) where it is aged for approximately 18 months. Once bottled, the wine remains for a further 12 months stored on the estate for refinement.

Tasting notes: intense ruby red colour. An ample and complex bouquet. More evident are the accents of mature red fruit, cinnamon, cassis, and toasted hazelnut; hint of incense. In the mouth an expression
of volume, sweetness and softness, all at the same time. An important structure of excellent tannins. It is
wonderful expression of Merlot and Cabenret Sauvignon.

Serving suggestions: red meat (both roasts or salted), game and mature cheeses.

Serving temperature: 18° C – open 1 hour ahead of time Store at a constant temperature of 17° C.
